Chocolate Brownies Recipe to Sigh For... 
Rich, Low-Fat, Good Mood Food!   

We tried several brownie mixes of different types and brands, both
organic and not, and none passed the "yum" test. Even worse, 
many call for a heavy dose of oil in their recipe. We finally found 
a box mix that was better than the rest, though it still tasted like 
something was missing -- we thought it could taste a bit richer, 
and be a bit healthier. 

Since hubby is very conscientious about what he eats, and we 
try to be as smart about our meals and snacks as we can, I got 
creative. First thing I did, I totally ignored adding the required 
"1/2 cup of vegetable oil" to the mix. So much fat, so many calories, 
so not necessary.


I now substitute pumpkin instead of all that fattening oil. After all, 
pumpkin is loaded health benefits and with beneficial vitamin A  
for our body parts, and especially eye health. 

Pumpkin also has lots of beta-carotene which helps fight cancer, has 
mood-enhancing tryptophan, may help lower blood sugar, has immune-
boosting vitamin C which can help battle colds faster. 

AND, pumpkin packs lots of fiber for heart protection and weight loss, 
the beta-carotene in pumpkin can help fight off skin wrinkles, and pumpkin 
has much fewer calories than the suggested "1/2" cup of vegetable oil" 
on the brownie mix box.

Plus, there are a lot more original, healthy and tasty ingredients in these
rich, delicious chocolate brownies -- they are brownies to sigh for. 

This is a rich, enhanced, smart, nutritious recipe for a deep chocolatey, 
ultra-special, intense, best decadent brownie.



List of Brownie Ingredients  --  directions and health benefits:

In addition to the required 1/4 cup of water and 1 egg called for the 
on the brownies mix package, I add:

15 oz. can 100% pure pumpkin 
(vitamin A especially for eyes, vitamin C to bolster immune system, 
beta carotene cancer fighter, heart health booster, weight loss fiber, 
mood-booster tryptophan, beta-carotene for skin wrinkles)

1 tbs of organic flax seeds seeds 
(excellent protein source, plus fiber, omega-3 fatty acids, vitamins, 
minerals and compounds to help keep cancers at bay)

2 tbs of organic quinoa 
(a complete protein with iron, fiber, rich with essential vitamins, 
minerals for tissues, cells, brain, muscles, red blood cells) 

3 heaping tbs of organic unsweetened shredded coconut 
(heart friendly fats, rich in fiber, vitamins, minerals, amino acids, 
boosts fat loss, said to stifle hunger and blood sugar spikes) 

4 tbs of Old Fashioned Quaker Oats 
(protein, fiber, vitamins, minerals, cardio benefits, may help lower 
blood pressure, blood sugar, LDL cholesterol, reduce hunger)

5 diced pitted prunes 
(protect against osteoporosis, cardio and other diseases, lower
blood pressure, get high fiber, help hair health, stabilize blood sugar) 

1 huge handful of Cacao Chocolate Nibs 
(healthy heart, happy moods, essential magnesium, fiber, iron, 
protective antioxidants, flavinoids, potassium)

Rainy day extra surprise
1 huge handful of 60% cacao bittersweet chocolate chips

Nut allergies?
Try substituting with a extra handful of 60% cacao chocolate nibs, or 
an extra handful of 60% caco bittersweet chocolate chips --then skip 
this next part about nuts: I alternate between adding 2 heaping handfuls 
of natural unsalted almonds, roasted unsalted pistachios, or raw unsalted 
pumpkin seeds (pepitas) into each brownie batch. Depending on which 
nut I used in each batch, I press the same nut into the top of the raw mix 
before baking so hubby knows which nut is featured in each brownie.



Baking Time for Best Healthiest Chocolate Brownies -
Depending on metal or glass baking dish (I use 8" & 9" pans) the timing 
on the box for this brand of brownies calls for about 45 or so minutes. 
But, because of all the added ingredients, I give the brownies an extra 
15-20 minutes or so before I start doing the toothpick test. 

Bottom line, brownie readiness depends on your baking pan (size, glass,
or metal), and your own oven. After they cool, I cut them into sections
and freeze them. I even make one batch in a muffin pan (they bake faster
that way too, so do the toothpick test sooner.) Yield depends on how you 
slice them - I get 12 to 16 brownies per baking pan. They're low-fat healthy 
brownies - and rich and delicious. Good mood food! Happy Baking!!
